These are the cookies Gaby and Nell have for dessert while Nell asks Gaby for a favor. They’re the same cookies Gaby brings to Winston Pinkham the following day when she visits to address concerns about the Sunrise Hills subdivision.
Pre-heat oven to 350 degrees.
Cream together ½ cup butter and ¼ cup sugar until the mixture is fluffy. Stir in
½ cup chopped blanched almonds and 1 teaspoon almond extract. Mix in 1cup flour.
Drop cookies using two teaspoons onto ungreased cookie sheets. Flatten tops of cookies with a sugared glass. Place a whole almond in center of each cookie.
Bake for 9 – 10 minutes at 350 degrees. Edges of cookies will brown, at which point they are done.
Makes about 20 cookies.
Because there is minimal liquid in the recipe the dough is very stiff. I find it easier to round the spoonful of dough by hand before placing on the cookie sheet.
