Chicken Salad a la The SunShine Cafe

This is the chicken salad that Gaby orders at the Sunshine Café when she meets Resident Trooper Matt Thomas to discuss the case at 2 Sunrise Trail. The recipe is unusual in not using any mayonnaise.

Poach 2 whole, skinned chicken breasts in water. Cool. Remove meat from bones, shredding into a large bowl.

In your preferred serving dish, combine 1 ½ tablespoons of red wine vinegar and 1 ½ tablespoons grainy mustard. Whisk in 3 tablespoons of olive oil until the dressing is smooth and slightly thickened.

Add 1 clove garlic, chopped, and shredded chicken. Mix gently.

Season with salt and pepper to taste.

Fold in 2 teaspoons minced chives and 1 teaspoon fresh rosemary, chopped (1/2 teaspoon dried).

I serve the chicken salad on a bed of shredded lettuce.
