Warm griddle or large frying pan over low heat.
In medium-size bowl, sift together 1 ¼ cups all-purpose flour, 2 ½ teaspoon double-acting baking powder, 2 tablespoons sugar, and ¾ teaspoon salt.
In small bowl, beat 1 egg well. Mix in 1 cup milk plus 3 tablespoons melted butter.
Slowly stir wet ingredients into flour mixture just until dry ingredients are wet.
When griddle or pan is hot enough for a drop of water to dance, grease lightly.
Drop batter from large spoon onto griddle, lightly spreading each pancake with back of spoon to a round with a diameter of the desired size. Cook pancake over low heat until rim of batter is full of broken bubbles and underside is golden brown.
Sprinkle each pancake with 1-2 teaspoons fresh or frozen blueberries, depending on size of pancakes. Turn and brown pancake on other side.
Serve with butter and warmed maple syrup.
